Olivier,
I did some more testing last night and this morning (have a shoot with a 
new client tomorrow that wants a "Holiday" look). Anyway, I found out 
that there's a lot of weird vertical stripes in the video image and 
other weird artifacts when Highlight Tone Priority is on. I turned it 
off and they seem to go away. I found this article that talks about it

Anyway, your camera might not have these issues, so be sure to test it 
before you shoot anything pro with those settings. Hopefully Canon will 
fix this issue soon...
