OK, after a massive investigation, I believe I've figured out the issue
and resolved it.

Apparently there is, what I feel at least, a bug in the delivery system.
The server was scrubbing the HTML and footer from the emails and sending
them thru as attachments.

It has actually been doing this for a while, but I didn't realize what
was happening until now. The footer had been getting added as an
additional text file as well (ever notice that there was a file attached
that resembles "5658674654.txt"? It was apparently the footer under
certain email clients), but none of this was known to me - I never had
any issues on my end.

But once I set up the header, that's when it started scrubbing the HTML
AND footer and attaching them as files instead (and you guys noticed
it). Certain people have antivirus on their computers which wouldn't
allow you to open those files. What a pain in the butt.

I had to setup a separate test list to track this issue down. Many
messages later, I am happy to say - it has been fixed. But, I need
everyone to take a look at their messages and become a "Chatty-Cathy"
this evening, if possible (I'll be teaching tonight, but will check my
messages before bed).

Because of the new setup, certain things may not go thru properly, so
please keep me informed if you have an issue with that (for instance,
Quicktime *.mov files are no longer allowed through no matter how big or
small - but you can still post a link to a *.mov file)
